Going to the village cinema, collecting chestnuts, putting on and taking off rubber boots and unraveling kite lines. Celebrate Gretas birthday, Champagne pitcher, drive to Karls Erlebnishof and spend the evening together on the couch. Small village on the Baltic Sea, what would we do without you in our autumn holiday?
If, after a long walk on the beach, you return to the holiday home with glowing cheeks, disheveled hair, aching legs and another 15 kilos of chestnuts (accidentally found along the way) nothing better against a murder hunger: A hearty plate with autumnal pounding, a big sausage and strong onion sauce. And cucumber salad always goes anyway.
Here comes the recipe for pumpkin-apple-potato mash with bratwurst and onion sauce

1/2 hokkaido pumpkin brushing and cut into small pieces. Peel 1 pound of potatoes and dice as well. Put the pumpkin and potatoes in cold water and salt. 2 apples core and dice as well. If the vegetables are soft after 10-15 minutes, add the apple pieces and simmer for another 5 minutes. Then drain the cooking liquid and add 1 good shot of milk , 1 tbsp butter and freshly grated nutmeg to the pan. Process into a lumpy porridge with a potato masher. Finally, stir in 1 chopped onion and season with salt and pepper .Heat in a pan 1 tablespoon butter and slowly fry the onions on a low flame. Sprinkle 1 tablespoon of sugar over the onions and let it caramelise while stirring. Add 4 tablespoons balsamic vinegar . Pour 1 glass of red wine and season with salt and pepper. When the red wine has boiled, add 2 tablespoons of sour cream and if necessary season with salt and pepper.
1 Slice the snake cucumber with thinly sliced pancakes with 1 teaspoon salt , black pepper , 1 small bunch dill chopped , Mix 1 tbsp brown sugar , 2-3 tbsp white wine vinegar , 1 finely cut onion and 1 tbsp neutral vegetable oil in a bowl , Allow to simmer and stir occasionally.
Serve with coarse fried coarse sausages.
